Hope Barkoukis, PhD, RD, LD

Hope Barkoukis is a registered dietitian who received her PhD in Nutrition from CWRU. Prior to joining the faculty she was a corporate nutrition consultant for Fortune 500 companies specializing in wellness and sports nutrition, a clinical research dietitian, and on the faculty of Cleveland State University. While at Cleveland State, she was the Director of the Nutrition Education and Training Center. This was a federally funded program designed to foster the integration of nutrition education into public (K through 12) school curriculums.

Dr. Barkoukis completed advanced training in culinary arts and has taught healthy cooking courses for television audiences as well as professional and community groups. She has conducted research in the areas of insulin resistance and substrate utilization in hepatic cirrhosis, as well as the use of low glycemic dietary interventions to modulate insulin sensitivity.

Dr. Barkoukis was the recipient of the 2001 John S Diekhoff Award for Distinguished Graduate Teaching awarded by the CWRU School of Graduate Studies.
